Soup Can Be A Simple, Delicious, And Healthy Dinner Option

By Rebecca Myers

When it comes to the evening meal few people consider soup a hearty choice or something to look forward to but this does not have to be the case. This menu option can be healthy, delicious, and extremely versatile. You can make many variations of any recipe, or you can use this as an excuse to use up any extra vegetable and leftover ingredients that you may have on hand. This choice can be rich, fragrant, and mouth watering, and you can make this type of item a weekly favorite that your family looks forward to.

The start of any great soup or hearty stew is the base. This can be stock that is made from scratch or a low fat and low sodium commercial product. Many cooks save any leftover broths and pan juices, and they freeze these to be used later in this type of meal. The same is true for vegetables and small amounts of meat that would otherwise be discarded.

If you have a few celery stalks or half an onion left over then dice these and put them into a small freezer bag. The same is true for any remaining chicken or leftover pot roast. These ingredients will stay good for many months when they are stored in the freezer in an airtight container. Start by adding water, stock, broth, and any other liquid ingredients that you choose. Some may add tomato juice or V8 vegetable juice as part of the fluid base in order to add more nutrients and flavor to the finished product.

Use a wide range of vegetables and protein sources when you make any version of this liquid gold. Look for different colors and nutrients, and be creative. You can add various peppers, and even leafy greens like spinach or kale can be swirled in for additional nutrition. Minimize the fats that are added though, and use olive oil or another beneficial choice if you feel a little extra fat is needed.

You can add some bouillon granules or cubes to the broth as well, in order to add another layer of flavor. Fresh chopped herbs can add another touch, and these are full of antioxidants and other nutrients that are desired. Since you can simmer soup for long periods everyone can eat on their own schedule, and this can be just as efficient and convenient as hitting the drive through in most cases. Use your imagination and there is no end to the delicious and extremely healthy recipes that you can come up with.
